Factors affecting the nutritional value of sprouts

Factors such as exposure to light, temperature, and moisture levels can affect the nutrition of sprouts.  Each variety of microgreen or sprout has a factor which impacts it to a greater degree.  We find the biggest culprit to diminished shelf life for Sunflower Greens is Moisture.  Sprouts should be stored in a way that maintains their moisture without making them soggy.

Proper storage techniques for maintaining freshness

Keep fresh sprouts in the original container or a ventilated plastic bag with a paper towel to absorb excess moisture. You can store them in the refrigerator crisper drawer where it's cooler.  However Sunflower Greens, unlike other micros, do not like extreme cold and will freeze more easily.  Storing in a warmer place like on a regular shelf is ideal.   Do Not rinse the sprouts until you are ready to enjoy them.  The best thing you can do for Sunflower Greens is to add a paper towel to absorb any excess moisture. Refresh the paper towel every few days to prevent sogginess.  Fold your paper towel down and around the bottom of the bag to catch any moisture so the greens are not sitting in any extra moisture.

Understanding the lifespan of fresh sprouts

Sunflower Greens are a little more delicate, than say Pea Greens, when it comes to crushing or rough handling.  As in there growing process, they are a little more delicate.  However they are more hardy when it comes to warmer temperatures.  This is a good snack to take on a road trip because they do not wilt like other greens when left out of the refrigerator for a period of time.  However, they DO need to be returned to the refrigerator upon arriving at your destination and should always be STORED in the refrigerator.

How to check freshness before consumption

Before consuming Sunflower Greens, it's crucial to check their freshness to ensure they are safe to eat. Here are some simple ways to determine if your sprouts are still good:

  • Look for vibrant color: While it is normal for the shade of green to vary, Sunflower Greens should not be clear looking or brown mushy looking.  It is okay for the leaves to have a yellow or brown edge as this may be where the shell of the Sunflower did not shed quickly enough.  It may even look like a bite was taken out of the leaf.  This is common when shells shed slowly.  
  • Inspect for mold: Check for any signs of mold growth or a slimy texture, as this indicates spoilage.
  • Smell test: Fresh sprouts should have a clean and fresh smell. If they have a sour or unpleasant odor, they may be spoiled.
  • Taste a small amount: If in doubt, taste a small amount of the sprout. Spoiled sprouts will have a bitter or off taste.
